Ask Dr. Coconut

How are you today? Have you try my recipe in post ago? Not yet, Why? You are still afraid of fat or cholesterol in the coconut? Ok, let us try to ask "Dr. Coconut".

Dr. Bruce Fife a.k.a. “Dr. Coconut” answers your questions about coconut, diet, and nutrition.

Will Eating Coconut Oil Raise My Cholesterol?
This is the most often asked question I receive regarding coconut oil. This is a legitimate concern because we have been conditioned to believe that all saturated fats raise cholesterol. Since coconut oil contains a high amount of saturated fat it would stand to reason that it too would raise cholesterol.

The truth is, eating coconut oil will improve your cholesterol values and reduce your risk of heart disease. Many people, however, have expressed concern after having their blood cholesterol checked and found that their total cholesterol has increased since they began using coconut oil. If coconut oil reduces risk of heart disease why did their cholesterol levels rise?

I have found that people’s response varies when they start using coconut oil. In some people total cholesterol decreases, while in others it increases. But in either case, their HDL (good) cholesterol always increases. The rise in total cholesterol that some people experience is due mostly to an increase in good cholesterol. Their cholesterol ratio (total cholesterol/HDL cholesterol) improves, thus reducing their risk of heart disease.

It is an established fact that the cholesterol ratio is a far more accurate indicator of heart disease risk than total cholesterol. Total cholesterol, in fact, is misleading and is a poor risk indicator because it lumps together both LDL (bad) cholesterol and HDL (good) cholesterol. Total cholesterol gives you no indication of how much is good and how much is bad. You can have high total cholesterol, but if a large percentage of it is made of up HDL, then your risk is low.

The lower the cholesterol ratio the better. A cholesterol ratio of 5.0 mg/dl is considered average risk. Above this value is high risk and below is less than average risk. A ratio of 3.2 mg/dl or less is considered optimal or the lowest risk.

If you have a total cholesterol value of 240 mg/dl, this would be considered high. You would be told that you are at high risk for heart disease. Your doctor would tell you to reduce your saturated fat intake and have you to take cholesterol-lowering drugs. However, if your HDL value was 75 mg/dl, your cholesterol ratio would be 3.2 mg/dl. This value is in the optimal range and you would have the lowest risk. Since the cholesterol ratio is a far more accurate indicator of heart disease risk, even though your total cholesterol may be high, your actual risk is very low.

Just the opposite can also happen. If a person has a total cholesterol reading of 178 mg/dl that we be considered ideal and be said to be at low risk. If, however, their HDL was only 35 mg/ld, their cholesterol ratio would be 5.1 mg/dl, which is in the high risk category! This explains why so many people who die of heart disease have normal or below normal total cholesterol levels and why many people with high total cholesterol levels live long lives without experiencing heart problems.

When people ask me about their cholesterol values I tell them to ignore total cholesterol and look at their cholesterol ratio. In every case, the cholesterol ratio improves when they start using coconut oil and their risk of heart disease drops.

Here is an actual case. A woman had a family history of high cholesterol. Family members had total cholesterol readings in excess of 400 mg/dl. After adding coconut oil into her diet her total cholesterol rose from 336 to 376 mg/dl. Ordinarily this is considered very high. However, her HDL (good) cholesterol nearly doubled from 65 to 120 mg/dl. Her cholesterol ratio dropped from a high risk value of 5.2 mg/dl to a low risk value of 3.1 mg/dl, which is in the optimal range. Although she had a very high total cholesterol reading, her true risk was very low. Her blood pressure was optimal at 110/60.

Studies have consistently shown that coconut oil increases HDL and improves the cholesterol ratio. While coconut oil does not reduce total cholesterol as effectively as polyunsaturated oils do, it has a greater effect on HDL. When HDL and cholesterol ratio values are evaluated, coconut oil reduces risk of heart disease more than soybean, canola, safflower, or any other vegetable oil typically recommended as “heart healthy.” Interestingly, most vegetable oils increase the cholesterol ratio thus increasing the risk of heart disease. Coconut oil is definitely the best oil you can use to protect yourself from heart disease.

Indeed coconut extraordinary. In fact a lot of benefit from all the part of coconut. Therefore, I have to write repeatedly. Even newest product is Liquid Smoke blessing for fish traders.
Allow me to cite the different parts of the coconut tree and its corresponding benefits and/or uses. Let's start with...

1. Coconut Roots
Coconut roots are used as beverage, dye, mouthwash, and medicine for dysentery (formerly known as flux or the bloody flux). A frayed-out piece of root can also be used as a toothbrush.

2. Coconut Trunks
Coconut trunks, its hardy and durable wood is used for building small bridges, preferred for their straightness, strength and salt resistance. It is also used to make benches, tables, carvings, picutre frames, tables, tool boxes and construction materials, among others. Paper pulp can also be extracted from the coconut trunk and other woody parts of the tree.

3. Coconut Branches
Coconut branches (leaf petioles) are strong and flexible enough to make a switch (a flexible rod, typically used for corporal punishment).

4. Coconut Leaves
Coconut leaves can be woven to create effective roofing materials, or reed mats. It can also produce good quality paper pulp, midrib brooms, hats and mats, fruit trays, waste baskets, fans, beautiful midrib decors, lamp shades, placemats, and bags. The stiff leaflet midribs can also be used to make cooking skewers and kindling arrows. Dried coconut leaves can be burned to ash, which can be harvested for lime.

5. Coconut Fruit
Coconut fruit produces buko, often used for salads, halo-halo (crushed ice with sweetened fruit), sweets and pastries. The "sport fruit" of the coconut known as makapuno is primarily harvested in the Philippines. They are sold in jars as "gelatinous mutant coconut" cut into balls or strands. Considered a delightful delicacy and largely used for making preserves and ice-cream. It is possible for it not to be kept in storage and still, will not germinate.

6. Coconut Meat
Coconut meat is the thick white, fleshy substance found inside the coconut shell. It is edible and can be used fresh or dried in cooking. It can also be used to obtain coco flour, desiccated coconut, coconut milk, coconut chips, coconut candies, bukayo or local sweetened shredded coconut meat, latik copra and even, animal feeds.

7. Coconut Water
Coconut water provides an isotonic electrolyte balance, and is a highly nutritious food source. Uses of coconut water include: coconut water vinegar; coconut wine; production of the chewy, fiber-rich "nata", good as a dessert and as a laxative; as a growth factor; and as a substitute for dextrose. It is also used to cure renal disorders. "Bukolysis" is the medical process of reducing or dissolving urinary stones from the urinary tract, using buko water from 7 to 9 months old coconuts. If you heard of "water therapy", there is also such thing as "buko/coconut therapy".

8. Coconut Milk
Coconut milk is made by processing grated coconut with hot water or milk, which extracts the oil and aromatic compounds. It should not be confused with the coconut water mentioned above, and has a fat content of approximately 17%. When refrigerated and left to set, coconut cream will rise to the top and separate out the milk. The milk is used to produce virgin coconut oil. It is a common ingredient in many tropical cuisines. In Thailand, coconut milk is the base of most Thai curries.

9. Virgin Coconut Oil
What is Virgin Coconut Oil (VCO)? VCO is created by harvesting fresh coconuts and using its meat which is called non-copra. Once the meat is taken from the coconut it is shredded. The shredded meat is then pressed so that you have the milk. The extracted milk is now centrifugal process (cold processing) so the water and the oil begin to separate. The lighter water will settle at the top and the oil settles on the bottom. The virgin coconut oil often retains a nice coconut taste, and will smell like fresh coconut.

It should be noted that the proper oil if in a solid state should melt in your hand because of your body heat. If this does not happen or if it does not become solid quickly, then you probably have bought an inferior type of extra virgin coconut oil. It should be noted that this product has a very long shelf life, sometimes up to two years. This means it lasts longer that other types of plant oils. This long shelf life means that the oil is able to retain its nutritional value for a very long time.

Extra virgin coconut oil has many different health benefits that are associated with it. Typically if you take the oil on a regular basis then you can expect to see a reduction in your cholesterol levels. It has also been noted that the coconut oil will help to improve your intestinal tract, control your blood sugar levels, and give you good immune support. It is also known to affect the body where it can improve digestion, allow the nutrients to be absorbed into the body properly and help support a healthy metabolic function. This is jus a few of the health benefits that are associated with the use of this product.

10. (Coconut) Apical Bud
Apical buds of adult plants are edible and are known as "palm-cabbage" or heart-of-palm. In the Philippines, it is known as ubod and considered one of the finest vegetables. It is considered a rare delicacy, as the act of harvesting the bud, could kill the palm. It can be served in many appetizing ways. Cubed in fairly large bits, makes a wonderful addition to Spanish rice, or in their long strips, to Arroz a la Cubana. It is also eaten in salads (mixed with mayonnaise or thousand island dressing), known as "Millionaire's Salad".

11. Coconut Infloresence
Out of the bud of the coconut tree's infloresence is a fermented juice called coconut toddy or, in the Philippines, tuba. The principal uses of the toddy are: as fresh beverage; for producing alcoholic beverages; for producing vinegar; for making sugar; and as a source of yeast for making bread.

11. Coconut Husk
Coconut husks are made of bristle fiber (10%), mattress fiber (20%) and coir dust and shorts or wastes (70%). Coir is used in ropes, mats, brushes, caulking boats and as stuffing fibre; it is also used extensively in horticulture for making potting compost. The husk can be used for fuel and are a good source of charcoal. Dried half coconut shells with husks are used to buff wooden floors, making it clean and shiny (free from dusts). In the Philippines, it is known as "bunot". Fresh inner coconut husk can be rubbed on the lens of snorkelling goggles to prevent fogging during use.

12. Coconut Shell
Coconut shell produces the core of the most saleable household products and fashion accessories that can be turned into lucrative, wide-selling cottage industries. In the Philippines, dried half shells are used as musical instrument in a folk dance called "Maglalatik", a traditional dance about conflicts for coconut meat within the Spanish era. They are also used in theatres, banged together to create the sound effect of a horses' hoofbeats. Half coconut shells may be deployed as an improvised bra, especially for comedic effect or theatrical purposes. Shirt buttons can be carved out of dried coconut shell. Coconut buttons are often used for Hawaiian Aloha shirts.

You see how amazing the coconut tree is? In fact, in the Philippines, it is considered as one of the major dollar earner industry that provides livelihood to most of the country's population. Indeed, a Tree of Life!

And did you know that in World War II, coastwatcher scout Biuki Gasa was the first of two from the Solomon Islands to reach the shipwrecked, wounded, and exhausted crew of Motor Torpedo Boat PT-109 commanded by then, the future U.S. President John F. Kennedy. Gasa suggested, for lack of paper, delivering by dugout canoe, a message inscribed on a husked coconut shell. This coconut shell was later kept on the President's desk, and is now, in the John F. Kennedy

What do you feel when drinking coconut water?
Yes .. nice and refreshing. But do you know that coconut water is also useful for our health?

Coconut water, we usually find in a young green coconut. Scientifically known as the endosperm. Once a coconut matures, if not harvested, the liquid will be absorbed into the husk and form the 'meat' of a mature coconut.

Coconut water is also a healing beverage. It's producers claim that coconut water aids in heart health, weight loss, dehydration, detox, stress, sports fatigue, digestive problems, skin problems and overall wellness.

You may have heard that coconut water is an excellent source of potassium. One packaged tetrapak of coconut water-around 12 ounces-contains 660 mg of potassium. That's 19% of your RDA (recommended daily allowance). Just to compare, one medium banana only has about 500mg of potassium. Potassium is a very important electrolyte as it maintains water retention, cell functions, regulates the nervous and heart systems.

MODERN DAY NOTE: Today we humans consume an overdose of caffeine in coffee, tea and soda. The increase of strain on the kidneys increases the amount of potassium loss. Therefore it is very important to supplement your diet with beverages HIGH in potassium-the best drink for this is coconut water.

The water and flesh from young coconuts contains the full range of B vitamins, with the exception of B6 and B12. B vitamins are essential for providing us energy as they break down carbohydrates and proteins. They also support nervous system function and, interestingly, the muscle tone of the stomach. Young coconut water is also high in minerals, particularly calcium(for bones), magnesium(for the heart) and potassium(for muscles).

An average young coconut provides 3 grams of dietary fiber which helps proper digestion and elimination. Fresh coconut water is very high in electrolytes - much higher than most sports drinks. This makes it a great choice for athletes and children who exercise a lot.

Finally, the water of young coconuts is completely sterile and so close to the structure of human blood that it can be transfused directly. In fact, it was regularly used during WW II for wounded soldiers when blood plasma was low.
